WINE-POACHED PEACHES

Amount Measure Ingredient -- Preparation Method

1 1/2 cups dry white wine

3/4 cup sugar

Zest and juice of one lemon

4 firm -- ripe peaches

 

1. Bring a large saucepan of water to

boil. Add whole peaches and blanch

for 20 to 30 seconds. Drain into a

colander and rinse with cool water.

2. In emptied saucepan, combine

wine, sugar, lemon zest, and lemon

juice. Bring to a boil over medium

heat, stirring occasionally. Reduce

heat to low and simmer gently for

about 5 minutes, until sugar is dis-

solved.

3. While syrup simmers, peel peach-

es, cut in ha1f and discard pits. Add

peach halves to syrup and simmer

for about 5 minutes. Turn off heat

and cool peaches in syrup. Serve

warm or chilled.
