GRILLED CHEESE POTATOES

Amount Measure Ingredient -- Preparation Method

2 pounds cooked waxy potatoes -- sliced about

1/4-inch thick

1 cup shredded cheddar cheese or vegan

equivalent

1/2 cup chopped scallions

Salt and pepper to taste

Cooking spray or oil

 

1. Lightly spray or oil 6 12 x 12

sheets of heavy duty aluminum

foil. (If you don't have heavy duty

foil, use double sheets of regular

foil.)

2. Distribute potato slices in mid-

dle of aluminum sheets, keeping

slices together. Sprinkle potatoes

with cheese and scallions. Season

to taste with salt and pepper. (Add

other herbs or spices as desired.)

3. Fold foil toward the center to

form 6 packets. Place packets on a

medium hot grill (or bake at 350°)

for 15 to 20 minutes.
