COUSCOUS TACOS

Amount Measure Ingredient -- Preparation Method

1 cup quick-cooking couscous

1 1/2 cups boiling water

2 teaspoons extra-virgin olive oil

Salt -- to taste

1 arge -- ¥ripe avocado,

peeled and cut into chunks

1 medium tomato -- seeded and diced

small

1/2 cup chopped red onion

8 corn tortillas

1 cup shredded cheddar cheese or vegan

equivalent

2 cups shredded iceberg lettuce

 

1. In a medium bowl, combine couscous,

boiling water, olive oil, and salt. Mix,

cover, and let sit for 5 minutes. Remove

cover and fluff with a fork.

2. In another medium bowl, coarsely mash

avocado. Stir in tomato and onions. (You

can also add any or all of the following: a

little lemon juice, hot sauce, chopped

cilantro, salt, pepper.)

3. Heat tortillas in the oven, microwave, or

steamer.

4. To assemble tacos: Spread warm tortillas

with avocado mixture. Top with couscous,

cheese, and lettuce. Fold in half and enjoy.
