Guest guest Posted April 30, 2001 Report Share Posted April 30, 2001 * Exported from MasterCook * FRAGRANT CAULIFLOWER WITH Poppy SEEDS Recipe By :Laxmi Hiremath Serving Size : 4 Preparation Time :0:00 Categories : Small Bites and Sides Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons cider vinegar 1 tablespoon fresh lime juice 1/4 teaspoon turmeric 1 teaspoon salt 1 small head cauliflower (about 1 pound) -- seperated into flowerets 3 medium tomatoes -- chopped 1/2 cup grated fresh coconut -- or 2 to 3 tablespoons dried 1/4 cup loosely packed fresh cilantro leaves 2 tablespoons vegetable oil 1 teaspoon cumin seeds 1/2 teaspoon black or brown mustard seeds 1 small onion -- finely chopped 3 cloves garlic -- minced 1 piece ginger root -- (1/2 inch) minced 1 1/2 teaspoons poppy seeds 1/2 teaspoon coriander 1 teaspoon cayenne 1/2 cup water 1. In a medium mixing bowl, combine vinegar, lime juice, turmeric, and salt. Add cauliflower and toss to coat. Marinate, stir- ring several times, for 10 minutes. 2. In a food processor or blender, combine tomatoes, coconut, and cilantro, and process until smooth. Set aside. 3. Heat oil in a large skillet over medium high heat. Add cumin and mustard seeds. When seeds begin to pop stir in onion, garlic, and ginger, and saute for 4 minutes. Add poppy seeds, coriander, and cayenne. Cook for 30 seconds. Stir in the coconut-tomato mixture and cook for 5 to 6 minutes, stir- ring constantly. Add cauliflower and water and bring to a boil. Reduce heat, cover, and cook until the sauce is thick and cau- liflower is tender-crisp, about 10 minutes.
