TOFU SANDWICH SPREAD

Amount Measure Ingredient -- Preparation Method

12 ounces firm tofu -- pressed and crumbled

1/2 cup chopped celery

1/3 cup chopped black olives

1/4 cup chopped red onion

1/4 cup chopped red bell pepper

1/4 cup chopped cornichons or other sour pickles

1 tablespoon each -- chopped parsley and

summer savory

1/4 cup soy mayonnaise

Salt -- to taste

 

In a mixing bowl, combine all ingredients and mix well.
