Guest guest Posted April 28, 2001 Report Share Posted April 28, 2001 * Exported from MasterCook * Simplest Fresh Tomato Sauce Recipe By : The Essential Vegetarian Cookbook by Diana Shaw, page 278 Serving Size : 4 Preparation Time :0:00 Categories : Sauces And Marinades Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon extra virgin olive oil 1 large garlic clove -- thinly sliced 1 1/2 pounds fresh tomatoes -- peeled seeded and chopped 2 tablespoons minced fresh basil OR 2 teaspoons crumbled dried basil salt and freshly ground black pepper -- to taste Serves 4 TOTAL TIME: 25 minutes TIME TO PREPARE: 25 minutes COOKING TIME: Included in time to prepare DO AHEAD: you can peel, seed, and chop the tomatoes up to 3 days in advance. Refrigerate until ready to use. REFRIGERATION/FREEZING: refrigerate up to 4 days. Freeze up to 6 months. Everyone has a secret for " the best " tomato sauce. Some say it's the tomatoes, some the quality of the olive oil, while others say it's a matter of cooking it quickly on very high heat. I endorse all three. Heat the oil in a medium skillet over medium-high heat. When it's hot, add the garlic. Reduce the heat to medium-low and swish the garlic slices through the oil until the slices begin to color, about 40 seconds. Remove the garlic from the oil with a slotted spatula or fork and discard them. Swiftly pour the tomatoes into hot oil, add the crumbled dried basil if using, and cook until the tomatoes reduce into a thick sauce, about 10 minutes. Stir in the minced fresh basil, if using. Remove the sauce from the heat, and season with salt and pepper. You can leave it chunky, or purée it with an immersion blender, or in a food processor. (Don't overdue it, or the sauce will be watery.) Note: the tomatoes must be rip to burstin', so to speak, more red than orange, with no black spots. PER SERVING: calories 68, protein 1.6g, carbohydrate 8.6g, fat 3.9g, cholesterol 0mg, sodium 15.7mg, 47% calories from fat. Outstanding source of vitamin C.
