Guest guest Posted April 28, 2001 Report Share Posted April 28, 2001 * Exported from MasterCook * Dough For Pizza Recipe By : The Essential Vegetarian Cookbook by Diana Shaw, page 416 Serving Size : 4 Preparation Time :0:00 Categories : Breads Pizza Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon dry active yeast -- (1 packet) 2 teaspoons sugar 1 cup warm water -- (98 to 115F.) 2 teaspoons salt 2 1/2 cups unbleached all-purpose flour -- up to 3 Serves 4 to 6 TOTAL TIME: about 2 hours TIME TO PREPARE: about 30 minutes REFRIGERATION/FREEZING: refrigerate up to 3 days FREEZE: up to 6 months. In a large mixing bowl, combine the yeast and sugar. Stir in the water and let the mixture rest until bubbly, about 5 minutes. Stir lightly. Add the salt and enough flour to make a dough that's soft and pliable, but not sticky. Lightly flour a large, flat work surface, turn the dough out of the bowl, and knead until it's smooth. Alternatively, knead the dough in a food processor or Mixmaster. Clean out the mixing bowl, dry it thoroughly, and grease it lightly or squirt it with nonstick spray. Shape the dough into a ball and place in the bowl. Cover the bowl with plastic wrap and set the dough aside in a warm, draft-free place until doubled in bulk, about 1 hour, 15 minutes. Note: The above recipe can also be used as a base for calzones. BREAD MACHINE OPTION: Place all of the ingredients in your breadmaker according to the manufacturer's instructions. Once the dough has risen, take it out of the machine, shape it as directed in the recipe, and continue to follow the recipe from that point.
