Guest guest Posted April 27, 2001 Report Share Posted April 27, 2001 * Exported from MasterCook * Country Style Macaroni (Vegetarian) Recipe By :Aliza Green, Bean Bible Serving Size : 6 Preparation Time :0:00 Categories : Bean Bible Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups Italian baked beans -- see recipe prepared with cannellini beans 12 oven-roasted plum tomatoes -- cut into strips (12-16) 1 pound maccherone pasta or rigatoni or ridged penne 1 bunch broccoli rabe -- trimmed (bottom 2 inches of stem discarded) 1/4 cup extra-virgin olive oil 1 tablespoon fresh chopped garlic 1/2 teaspoon red pepper flakes 1/2 cup grated aged Provolone cheese 1. In a blender or food processor, puree half of the baked beans, leaving the remaining beans whole. Reserve. 2. Prepare the Oven-Roasted Plum Tomatoes. Reserve. 3. Bring a large pot of salted water to a boil. Add the pasta and cook for about 9 minutes or until al dente or firm to the tooth. Drain and reserve. 4. Bring a small pot of water to a boil. Cut the rabe into 1/2-inch thick slices. Add the rabe to the boiling water and cook for 1 minute, until the strips turn bright green. Drain and rinse under cold water. Reserve. 5. In a large, heavy-bottomed pan heat the olive oil over medium. Add the garlic and red pepper flakes. Cook until the garlic sizzles and gives off its aroma. Stir in the broccoli rabe and cook 5 minutes more. Add the pureed and whole cannellini beans and the tomato strips. Bring the sauce to a boil. Add the pasta, toss to combine, and sprinkle with the Provolone. Serve immediately.
