Quick Cold Sesame Noodles

1 small garlic clove -- grated

2 teaspoons grated peeled gingerroot

1 scallion, including greens -- chopped

1 tablespoon unsalted peanut butter

1 tablespoon tahini

1 teaspoon low-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame seeds -- toasted

2 tablespoons hot water

8 ounces soba noodles or dried linguine

 

Place the garlic, ginger, scallion, peanut butter, tahini, soy sauce, rice

vinegar, sesame seeds, and hot water in a food processor. Process until smooth.

Transfer sauce to a large mixing bowl.

 

Cook the soba noodles or linguine according to the package directions. Drain,

rinse with cold water (this keeps the noodles from sticking together), and toss

with the sauce. Refrigerate until chilled through, at least 3 hours. Toss

again before serving.
