Guest guest Posted April 25, 2001 Report Share Posted April 25, 2001 * Exported from MasterCook * Red Lentil Spread Recipe By :The Essential Vegetarian Cookbook, Diana Shaw Serving Size : 4 Preparation Time :0:00 Categories : Essential Vegetarian Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons canola or vegetable oil 1/2 clove garlic -- grated 1 1-inch piece fresh ginger -- peeled & grated 2 tablespoons minced fresh cilantro 2 teaspoons ground cumin 1/2 teaspoon ground turmeric 1 cup uncooked red lentils -- rinsed 1 1/3 cups water -- (approximately) 1 tablespoon fresh lemon juice Heat the oil in a small saucepan over medium-high heat. When it's hot, add the garlic, ginger, cilantro, cumin, and turmeric. Reduce the heat to medium-low and saute, stirring often, until the garlic starts to toast, about 3 minutes. Stir in the lentils along with the water. Bring to a boil over medium-high heat. Reduce the heat to medium-low, cover, and cook until the lentils have cooked through and all the water has been absorbed, about 20 minutes. Check often after 10 minutes to make sure they aren't sticking. If so, add another 1/4 cup water, stir, cover, and continue cooking. Mash the lentils with the back of a wooden spoon. Stir in the lemon juice. Let the spread sit at least 30 minutes at room temperature before serving.
