Sweet and Sour Seitan

1 1/2 cups apple juice

1/4 cup lemon juice

1/3 cup sugar or a natural sweetener

2 tablespoons cornstarch

2 tablespoons corn oil

1 pound seitan -- cut in 1/2-inch cubes

1 teaspoon grated fresh ginger

2 scallions -- minced

2 medium carrots -- cut into matchstick julienne strips

2 medium yellow squash -- cut into half rounds

1/4 pound snow peas -- trimmed

1/2 cup vegetable stock

3 tablespoons low-sodium tamari

freshly cooked rice

 

Combine apple juice, lemon juice, and sugar with cornstarch and set aside. In a

large skillet, heat oil and saute seitan until golden brown on all sides, about

5 minutes. Remove cubes with a slotted spoon and set aside. Saute giner,

scallions, and carrots in the skillet 3 to 5 minutes. Add squash and snow peas;

saute 2 minutes more. Add stock and tamari, cover, and cook until vegetables

are slightly tender, about 3 to 5 minutes. Add seitan and juice-cornstarch

mixture. Stir gently until sauce thickens. Adjust seasonings and serve over

rice.
