Tangy Twice-Cooked Seitan and Potatoes

2 tablespoons corn oil

1 medium onion -- chopped

1 pound leftover sauteed seitan slices -- cut into 1/2-inch dice

2 pounds boiling potatoes -- cooked and cut into 1/2-inch dice

3/4 cup barbecue sauce

1/2 cup vegetable stock

salt and freshly ground black pepper

 

Heat oil in a large skillet over medium-high heat. Add onion and cook, stirring

occasionally, until they begin to brown, about 10 minutes. Add diced deitan,

potatoes, barbecue sauce, and stock. Simmer for 10 minutes, stirring

frequently. Season with salt and pepper to taste.
