Guest guest Posted April 24, 2001 Report Share Posted April 24, 2001 * Exported from MasterCook * Cabbage and Spelt Soup Recipe By :Helga Hughes Serving Size : 4 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons canola margarine 1/4 cup no-cholesterol bacon substitute 2 tablespoons minced yellow onion 4 cups green cabbage -- thinly sliced 1/4 teaspoon sea salt 1/4 teaspoon freshly ground black pepper 1/2 teaspoon dried sage or 1 tsp chopped fresh sage 1 tablespoon whole-grain spelt flour or white spelt flour 6 cups ready-to-serve vegetable broth 1/2 cup cooked spelt kernels -- see About 1/4 cup grated swiss cheese Place the margarine in a 3 quart kettle and melt over medium heat. Add the bacon substitute and onions, and cook, stirring frequently, until the onions are soft. Add the cabbage, salt, pepper, and sage to the kettle, and stir until the cabbage is lightly browned. Add the flour and continue to stir, allowing the flour to coat the cabbage. Add the stock to the kettle, Increase the heat to high and bring to a boil, stirring constantly. Add the spelt kernels and reduce the heat to low. Cover the pot and simmer 15 minutes. Transfer the soup to 4 large soup bowls and top each with a tablespoon of grated cheese. Serve immediately.
