This was tonight's side dish and it was utterly delicious. I only had a

little as I am still following the moderate low carb thing. It was

incredible. In the old days, I would've eaten 2 servings. Large servings.

It is far from low fat but I lowered the fat a bit by using egg substitute

and lowfat milk. I know the blue cheese has a ton of fat so this is how I

lowered it. I didn't feel as guilty.

1 1/2 cups lowfat milk

1 clove garlic -- minced

3/4 tsp salt -- divided

1/2 cup quick-cooking grits

1/4 cup blue cheese -- crumbled

2 tbsp butter -- cubed

1/4 cup heavy cream

1/4 cup egg substitute

1 egg white -- lightly beaten

2 tbsp Blair's Jalapeno Death -- or other green sauce

1 tbsp parmesan cheese

1 tsp dried basil

1 tsp dried thyme

and remaining ingredients; pour into a lightly greased 1-1/2 qt souffle

dish.

Bake at 350°F for 45 min-1 hour. The center will be slightly soft.
