I made this one up yesterday, and it turned out GREAT! My son loved it too!

Greek Garbanzo Stew

Amount Measure Ingredient -- Preparation Method

1 28 oz can diced tomatoes

1 14.5 oz can vegetable broth

2 15-16 oz cans garbanzo beans -- rinsed & drained

2 tablespoons roasted garlic tomato paste -- (to 3 tbsp)

1/4 cup olive oil

1/2 cup chopped onions

1 tablespoon minced garlic

1 teaspoon finely minced fresh rosemary

1 tablespoon Greek oregano -- (regular oregano okay)

2 tablespoons minced parsley

1 teaspoon Greek Seasoning -- (Cavender's is one brand)

salt & freshly ground pepper to taste

garnish: crumbled feta cheese (optional)

 

Combine all ingredients in slow cooker. Cook on high for 3-4 hours or on low

for 6-8 hours.

 

Sprinkle individual servings with crumbled feta cheese if desired.

 

VARIATION: Add a large handful of prewashed, precut " bag spinach " during the

last hour of cooking.

NOTES : The olive oil does lend additional " Greek flavor " , but may be omitted or

reduced if you wish to make this lower fat or fat free.
