Greenlee Serving Size : 8 Preparation Time :0:00 Categories : Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 28 oz can diced tomatoes 1 14.5 oz can vegetable broth 2 15-16 oz cans garbanzo beans -- rinsed & drained 2 tablespoons roasted garlic tomato paste -- (to 3 tbsp) 1/4 cup olive oil 1/2 cup chopped onions 1 tablespoon minced garlic 1 teaspoon finely minced fresh rosemary 1 tablespoon Greek oregano -- (regular oregano okay) 2 tablespoons minced parsley 1 teaspoon Greek Seasoning -- (Cavender's is one brand) salt & freshly ground pepper to taste garnish: crumbled feta cheese (optional) Combine all ingredients in slow cooker. Cook on high for 3-4 hours or on low for 6-8 hours. Sprinkle individual servings with crumbled feta cheese if desired. VARIATION: Add a large handful of prewashed, precut " bag spinach " during the last hour of cooking. - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 509 Calories; 14g Fat (24.6% calories from fat); 23g Protein; 76g Carbohydrate; 21g Dietary Fiber; 1mg Cholesterol; 375mg Sodium.
