They were both posted on Veg-Recipes before -- so thanks to the original posters! I was going to suggest that you could take any coffee cake recipe and simply use Egg Replacer for any eggs called for and soy milk for the milk. Grease an 8-inch square or 9-inch round baking pan and dust with 2 tablespoons bread crumbs. In a small bowl, combine remaining 2 tablespoons bread crumbs, 1/2 teaspoon cinnamon, sugar and pecans to make streusel. Set aside. In a food processor or blender, blend tofu, adding apple juice gradually, until thoroughly smooth. Whisk together oil, syrup and vanilla in a medium-sized bowl. Add tofu mixture and whisk to blend.
