Guest guest Posted April 22, 2001 Report Share Posted April 22, 2001 * Exported from MasterCook * Polenta with Crumbles, Green Chilies and Cheese Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Morningstar Farms Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups non-fat milk 1 cup water 3/4 cup yellow cornmeal 1 1/2 teaspoons minced garlic 1 teaspoon salt 1/2 cup parmesan cheese 2 cups Morningstar Farms® Burger Style Recipe Crumbles 2 4.5 oz cans diced green chilies -- well-drained 2 cups canned corn -- drained and divided 2/3 cup chopped cilantro -- divided 3 cups low-fat shredded cheddar cheese -- divided 1/2 cup fat-free half & half In a heavy saucepan, mix together milk, water, cornmeal, garlic, salt, and Parmesan cheese to make Polenta. Bring to simmer over medium heat, whisking constantly. Cook until polenta has thickened, about 10 minutes. Spoon half of polenta into a 3-quart baking dish coated with cooking spray. Over the top of polenta, evenly spread MORNINGSTAR FARMS Burger Style Recipe Crumbles, 1 can of chilies, 1 cup of corn, half of the cilantro and half of the shredded cheese. Spoon on remaining polenta into dish and top with remaining chilies, corn, cilantro and cheese. Top with 1/2 cup of fat-free half & half. Bake at 400º F for 25-30 minutes or until cheese begins to brown.
