Mexican Scrambler

4 4 oz cartons Morningstar Farms® Scramblers®

4 corn tortillas -- cut into one-inch strips

3/4 cup finely chopped onions -- divided

1/2 cup chopped cilantro -- divided

2 cups salsa

1 tablespoon olive oil

1/2 teaspoon minced garlic

1/2 teaspoon dried oregano

 

Thaw MORNINGSTAR FARMS SCRAMBLERS per package directions.

 

Preheat oven to 350º F.

 

Arrange tortilla strips in a single layer on non-stick baking sheet. Bake for 10

to 15 minutes or until crisp. Set aside.

 

Combine 1/4 cup of the onions and 1/4 cup of the cilantro in a small bowl. Set

aside.

 

Heat salsa in a saucepan over medium heat. Add the tortilla strips and 1/4 cup

cilantro. Simmer for 5 minutes.

 

Heat oil in large non-stick skillet over medium heat. Add rest of the onions,

garlic and oregano. When the onions have softened, stir in MORNINGSTAR FARMS

SCRAMBLERS. Cook, stirring often until scrambled. Add salsa with tortillas.

Serve with reserved onions and cilantro.
