Lettuce, Tomato, Breakfast Strip and Quinoa Salad

1 5.25 oz package Morningstar Farms® Breakfast Strips

2 cups cooked quinoa -- cooled

3 tomatoes -- chopped

3 stalks celery -- chopped

1 bunch green onions -- chopped

4 cucumbers -- peeled & chopped

1 avocado -- diced

1 cup shredded lettuce

1/4 cup low-fat mayonnaise

1/4 teaspoon salt

1/4 teaspoon pepper -- (optional)

 

Prepare MORNINGSTAR FARMS Breakfast Strips per package instructions. Cut into

bite size pieces.

 

In a large bowl, combine Quinoa, MORNINGSTAR FARMS Breakfast Strip pieces and

vegetables.

 

Combine mayonnaise with salt and pepper and toss lightly with vegetable salad.
