Italian-Style Shepherd's Pie

1 9.5 oz package Morningstar Farms® Tomato and Basil Pizza

Veggie Burgers -- thawed

1 cup chopped onions

1 1/2 teaspoons minced -- roasted garlic

1 tablespoon vegetable oil

1 cup sliced carrots

1 cup sliced mushrooms

1 cup chopped green pepper

1 tablespoon flour

1/2 cup vegetable broth

1/4 cup diced pimentos

3 cups mashed potatoes

paprika

 

Cut MORNINGSTAR FARMS Tomato and Basil Pizza Veggie Burgers into pieces. Set

aside.

 

In large fry pan, sauté onions and garlic in oil. Add carrots, mushrooms and

green pepper. Continue cooking and stirring about 3 minutes longer or until

vegetables are crisp-tender. Add Veggie Burgers and flour, mixing thoroughly.

Stir in broth and continue cooking and stirring until mixture starts to boil.

Remove from heat and stir in pimentos. Place hot mixture in shallow, medium-size

casserole dish coated with vegetable cooking spray. Top with mashed potatoes.

Sprinkle with paprika.

 

Bake at 400º F about 20 minutes or until potatoes are browned. Serve hot.
