Guest guest Posted April 21, 2001 Report Share Posted April 21, 2001 * Exported from MasterCook * Stir-Fried Watercress Recipe By :Vegetarian Cooking for Everyone, Deborah Madison Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Cooking for Everyon Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 bunches watercress -- (to 4) -- about 10 cups salt 2 tablespoons sesame or peanut oil 1 teaspoon dark sesame oil 1 tablespoon minced ginger 1 clove garlic -- minced 1 jalapeno chile OR 2 pinches red pepper flakes -- seeded & minced Trim and discard any tough or ragged stems from the watercress. Bring 3 quarts of water to a boil and add 1 tablespoon of salt, then the watercress. Cook until it turns bright green -- 1 minute should be fine -- then rinse with cold water and pour into a colander. Gently press out the excess water. Heat the wok, add the oils, and turn to coat the sides of the wok. When a haze forms, add the ginger, garlic, and chile and stir-fry for 30 seconds. Add the watercress and stir-fry until heated through, about 2 to 3 minutes.
