I'm not sure exactly what a " coffee cake " is, but here are some recipes

Blueberry Oatmeal Breakfast Cake

Amount Measure Ingredient -- Preparation Method

1 1/3 cups flour

(up to half may be whole wheat)

3/4 cup quick cooking oats

1/3 cup sugar or substitute

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup soy milk

1/4 cup applesauce

2 tablespoons cornstarch

1 cup frozen blueberries -- (or fresh if you

Preheat oven to 400 degrees F. In medium mixing bowl, combine flour, oats,

sugar, baking powder and salt. In another bowl, combine soy milk,

applesauce and cornstarch. Pour this wet mixture into the dry mixture all

at once. Stir until just moistened (batter will be lumpy). Fold in the

blueberries, spoon batter into a non-stick 8 x 8 baking pan. Bake 20 - 25

minutes, cool on rack 5 - 10 minutes, serve warm. ***Even though this is

called breakfast cake, it is very yummy at any time of the day. Moist and

chewy!!!

 

Serves: 9 Squares - calories per square 143; fat .7g; carbs 31.9; protein 3.4

 

Preparation time: 15 min., not including baking time

Molasses Cake

Amount Measure Ingredient -- Preparation Method

1/2 cup molasses

2/3 cup hot water

1/2 cup seedless rasins

1/2 teaspoon salt

1/8 teaspoon cinnamon (or more)

1/2 teaspoon cloves

1/2 teaspoon baking soda

1 3/4 cups flour

 

Preheat oven to 350. Mix molasses, hot water, and raisins. Bring to boil

for 5 minutes, then cool to room temperature. In another bowl, sift

remaining ingredients together. Add cooled molasses mixture. Mix well. Pour

into a nonstick 8x8x2 pan. Bake for 45 minutes. Cool and serve.

Applesauce Spice Cake

Amount Measure Ingredient -- Preparation Method

1/2 cup molasses

1 cup applesauce

1 teaspoon cinnamon

1/2 teaspoon cloves

1 teaspoon baking powder

1/2 teaspoon baking soda

1 3/4 cups flour

(I use whole wheat pastry flour)

2 teaspoons ginger -- (optional)

 

Combine the molasses and applesauce in a large bowl. Combine remaining

ingredients and stir into the liquid. (If the batter seems very dry, add a

little more applesauce or a little water.) Bake in a nonstick or

pan-sprayed 8*8-inch baking pan, in a 350 degree oven, for 30-45 minutes or

until it tests done.

 

The optional ginger makes an acceptable gingerbread. I have also had

success leaving out the ginger and adding 3 or 4 tablespoons of cocoa (I

guess you could use carob) to make a tasty but not very sweet or rich

chocolate cake. If you use cocoa you might need to add extra sweetening,

but that depends on your taste.
