Guest guest Posted April 20, 2001 Report Share Posted April 20, 2001 * Exported from MasterCook * Chile Butter Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 52 Serving Size : 1 Preparation Time :0:00 Categories : Sauces And Marinades Vce:Sauces & Condiments Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large jalapeño or 2 serrano chiles OR 1 New Mexican long green chile -- roasted 1 lime -- finely chopped zest 1/4 pound butter 1 teaspoon lime juice -- or more to taste 2 tablespoons chopped cilantro 1 scallion including an inch of the green -- thinly sliced Few pinches salt 1/4 teaspoon ground coriander MAKES 1/2 CUP This spicy butter goes particularly well with sweet vegetables, such as carrots, beets, sweet potatoes, and corn. Mince the chiles with the lime zest, then beat into the butter and add the remaining ingredients.
