Guest guest Posted April 20, 2001 Report Share Posted April 20, 2001 a polenta type pasta - wonder how heavy this would be..... ? 2 recipes here.... * Exported from MasterCook * Semolina Corn Gnocchi with Roast Capsicum Puree Recipe By :Australian Women's Weekly Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 cups milk 3/4 cup semolina flour 3/4 cup grated Parmesan cheese 4 1/4 tablespoons butter 1 whole egg 1 cob corn (1/2-cup kernels) -- roasted Salt and pepper 1 Pinch nutmeg 3 1/2 ounces ricotta cheese or more -- for serving Red Pepper Sauce (see recipe) Bring milk to the boil with the seasonings, whisk in semolina and cook out until smooth. Add corn, cook out for a further 5 minutes. Remove from heat; then stir through the butter, egg and Parmesan. Pour out onto a greased tray; and set in the refrigerator. Once set, cut out rounds using a cookie cutter. To serve, reheat gnocchi in the microwave until hot; then pour over the roasted pepper sauce and scatter with ricotta cheese before serving. Add the vegetable stock and simmer until the liquid has reduced by half. Combine ingredients in a food processor and blend till smooth.
