SPICY BLACK SOYBEAN SALSA

Amount Measure Ingredient -- Preparation Method

4 medium tomatoes -- chopped

1 can chopped green chiles -- (4.5 oz.) drained

1/3 cup chopped onion

1/3 cup chopped fresh cilantro

1/8 teaspoon salt

1 jalapeno pepper -- seeded and finely

diced

2/3 cup canned black soybeans -- drained

 

Indiana Soybean Board

 

Combine all ingredients in a medium bowl. Serve at room temperature

or chill before serving. Store in refrigerator.

 

Yield: 3-1/2 cups. Serving size: 1/4 cup. Per serving: 24 calories,

0.5 g fat (0 g sat fat), 1.5 g protein (1 g soy protein), 4 g

carbohydrate, 70 mg sodium, 0 mg cholesterol, 1.5 g dietary fiber.
