Guest guest Posted April 20, 2001 Report Share Posted April 20, 2001 * Exported from MasterCook * Parsley-Caper Sauce Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 56 Serving Size : 1 Preparation Time :0:00 Categories : Sauces And Marinades Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup finely chopped parsley 2 tablespoons small capers -- rinsed 1 shallot -- finely diced 1 teaspoon grated lemon zest 1/3 cup extra virgin olive oil 1 tablespoon white wine vinegar or champagne vinegar 2 teaspoons fresh lemon juice or to taste Salt and freshly milled pepper MAKES ABOUT 1/2 CUP Sharp and lemony, this sauce brightens warm or cold vegetables, fried cheese, vegetable fritters, and grains and beans. Whisk everything together, seasoning with salt and pepper to taste. Let stand for 10 minutes, then taste again and adjust the seasonings, adding more vinegar or lemon juice if needed.
