1/2 cup finely chopped parsley

2 tablespoons small capers -- rinsed

1 shallot -- finely diced

1 teaspoon grated lemon zest

1/3 cup extra virgin olive oil

1 tablespoon white wine vinegar or champagne vinegar

2 teaspoons fresh lemon juice or to taste

Salt and freshly milled pepper

Sharp and lemony, this sauce brightens warm or cold vegetables, fried
