Guest guest Posted April 20, 2001 Report Share Posted April 20, 2001 * Exported from MasterCook * Grilled Seitan Cutlets Recipe By :Robin Robertson, 366 Healthful Ways to Cook Tofu and other Meat Alternatives Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon Dijon mustard 1/2 teaspoon dry mustard 1/8 teaspoon cayenne 1 pound seitan -- cut into 1/4-inch slices 1 tablespoon vegetable oil 4 tablespoons red wine 1 teaspoon Worcestershire sauce 1/4 teaspoon salt Combine both mustards with the cayenne and spread thinly over seitan slices on both sides. Set aside for at least 20 minutes. Heat oil in large skillet over medium-high heat. Add seitan and fry rapidly for 2 to 3 minutes over over high heat, turning once, to seal both sides. Lower heat to medium and cook 4 minutes longer, turning occasionally. Transfer seitan to a baking dish and keep warm in a 275F oven. Add wine and Worcestershire sauce to the pan juices and season with salt.
