Guest guest Posted April 19, 2001 Report Share Posted April 19, 2001 * Exported from MasterCook * Tofu " Tuna " And White Bean Salad Recipe By : Pasta East to West by Nava Atlas, page 192 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Salads, Main Dish Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked pink beans (about 3/4 cup dried) OR 16-ounces canned -- drained and rinsed 4 ounces baked marinated tofu -- finely diced up to 6 1/3 cup chopped black olives -- preferably cured 2 large celery stalk -- diced 1/4 cup chopped fresh parsley 1 1/2 tablespoons extra-virgin olive oil 1 lemon -- Juice of Freshly ground black pepper -- to taste Curly green or red leaf lettuce -- as needed 6 servings Tuna and beans are a standard Italian salad duo. Here, baked marinated tofu makes a great companion for tuna. This salad makes a great companion to many of the light Italian pasta dishes in this cookbook. Combine all the ingredients except the lettuce in a serving bowl, and toss together. To serve, arrange 2 or 3 lettuce leaves on each plate, and spoon some salad over them.
