Guest guest Posted April 18, 2001 Report Share Posted April 18, 2001 * Exported from MasterCook * Swiss Chard Frittata With Fresh Herbs Recipe By : Pasta East to West by Nava Atlas, page 190 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces Swiss chard -- up to 12 1/2 cup chopped fresh parsley 6 basil leaves -- sliced, up to 8 3 scallions -- sliced 4 eggs -- beaten 2 tablespoons grated fresh Parmesan cheese -- optional, up to 3 Salt and freshly ground pepper -- to taste Canola or light olive oil for frying 4 servings Swiss chard is a well loved green vegetable in Italian cuisine and, like other nourishing greens, is rather underused on this side of the Atlantic. This is a variation of a classic frittata. Wash the Swiss chard well. Cut away thick mid-ribs, and chop the leaves fairly fine. Place in a wide, nonstick skillet, and cover. Steam (in batches if necessary) with just the water clinging to the leaves until just tender but still bright green, about 3 to 4 minutes. Remove from the heat. Combine the Swiss chard in a mixing bowl with all the remaining ingredients except the oil. Heat just enough oil to coat the bottom of the same skillet. When hot, pour in the Swiss chard mixture. Turn the heat to medium, and cover. Cook until the bottom is nicely golden brown. Slide the frittata onto a large, flat plate. Holding the bottom of the plate, invert the skillet over it, then quickly turn the skillet right side up so that the frittata flips back into it. Remove the plate, return the skillet to the heat, and cook the second side until golden brown. Slide the cooked frittata back onto the plate, and let it cool for a few minutes, then cut into 4 wedges to serve.
