Seitan with Brown Sauce

3 tablespoons corn oil

1 tablespoon minced carrot

1 tablespoon minced celery

2 tablespoons minced shallot

1/3 cup dry red wine

1 1/2 cups vegetable stock

1 tablespoon tamari soy sauce

1/8 teaspoon freshly ground black pepper

1/2 teaspoon tomato paste

1 tablespoon cornstarch dissolved in 2 tablespoons

water

1 pound seitan -- cut into 1/4-inch slices

salt and freshly ground black pepper

 

Heat 1 tablespoon of the oil in a small saucepan over medium-high heat. Add

minced carrot, celery, and shallot, and saute, stirriing until softened, about 2

minutes. Reduce heat to medium, add wine, and reduce until almost evaporated,

about 3 minutes. Add vegetable stock, tamari, pepper, and tomato paste; cook,

whisking constantly, for about 5 minutes to reduce sauce by one third. Whisk in

cornstarch mixture and stir constantly to thicken, about 2 minutes. Keep warm.

 

Heat remaining 2 tablespoons oil in a large skillet over medium-high heat.

Sprinkle seitan with salt and pepper, add to skillet, and brown both sides,

about 2 minutes each side. Add half of the reserved sauce to seitan and simmer

1 to 2 minutes. Serve seitan slices topped with remaining sauce.
