Guest guest Posted April 18, 2001 Report Share Posted April 18, 2001 * Exported from MasterCook * Lemon-Tarragon Seitan Recipe By :Robin Robertson, 366 Healthful Ways to Cook Tofu and other Meat Alternatives Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons corn oil 1 pound seitan -- cut into 1/4-inch slices salt and freshly ground black pepper 1/2 cup Cognac 1 cup vegetable stock 2 tablespoons Dijon mustard 2 tablespoons minced fresh tarragon or 1 teaspoon dried tarragon 2 tablespoons fresh lemon juice 1 tablespoon capers Serves 4 to 6. Heat oil in large skillet over medium heat. Sprinkle seitan slices with salt and pepper. Add seitan to the skillet and saute, turning once, until lightly browned, about 5 minutes total. Meanwhile, warm Cognac in a small saucepan over medium heat. Pour it over the seitan, carefully ignite, and shake until the flames subside. Add stock, mustard, tarragon, and lemon juice, reduce heat to low, and simmer, turning once, until sauce reduces, about 10 minutes. Season to taste with salt and pepper. Arrange seitan on a warm platter.
