Guest guest Posted April 18, 2001 Report Share Posted April 18, 2001 * Exported from MasterCook * Tofu with Shiitake Mushrooms and Garlic Recipe By :Robin Robertson, 366 Healthful Ways to Cook Tofu and other Meat Alternatives Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon corn oil 1 tablespoon toasted sesame oil 1 pound firm tofu -- cut into 2 1/2 x 1 x 1/4-inch slices 6 ounces shiitake mushrooms -- stemmed and thinly sliced 2 ounces white mushrooms -- thinly sliced 4 scallions -- chopped 2 cloves garlic -- minced 1 teaspoon minced fresh ginger 1/4 teaspoon hot red pepper flakes 1/4 cup low-sodium tamari 3 tablespoons mirin,white wine, or sherry 1 cup vegetable stock 1 tablespoon cornstarch dissolved in 1 tablespoon water Serves 4 to 6. Heat oils in a large skillet over medium-high heat. Add tofu and saute until golden brown, about 2 minutes on each side. Add mushrooms, scallions, garlic, ginger, red pepper flakes, tamari, mirin, and stock. Simmer 2 minutes, adding cornstarch mixture to simmering skillet, stirring until sauce thickens, about 2 minutes. Description: " The shiitakes impart a deep woodsy flavor to this flavorful dish.
