Mediterranean Spinach With Pine Nuts And Raisins

1 tablespoon extra-virgin olive oil

2 cloves garlic -- crushed

2 tablespoons pine nuts

10 ounces fresh spinach -- up to 12

preferably triple-washed -- rinsed

stemmed and coarsely chopped

1 tablespoon lemon juice

1/4 cup raisins

Salt and freshly ground black pepper

 

4 to 6 servings

 

Here's a traditional side dish that's both elegant and easy. Its mild

slightly sweet flavor provides nice counterpoint to boldly flavored Italian

pasta dishes.

 

Heat the oil in a soup pot or steep-sided stir-fry pan. Add the garlic and

sauté over low heat for 1 minute, stirring frequently. Add the pine nuts

and continue to sauté stirring often, until they and the garlic are golden,

about 3 minutes longer.

 

Add the spinach and cover. After 1 minute, uncover and stir, then cover

and cook until the spinach is just wilted but still bright green, about 1

to 2 minutes more. Remove from the heat.

 

Stir in the lemon juice and raisins, then season to taste with salt and

pepper, and serve at once.
