Sauteed Seitan with Shiitake Mushrooms

4 tablespoons corn oil

1/4 pound shiitake mushrooms -- stemmed and thinly sliced

1 large shallot -- minced

salt and freshly ground black pepper

1/4 pound white mushrooms -- stemmed and thinly sliced

1/3 cup Madeira

1 pound seitan -- cut into 1/4-inch slices

1 tablespoon minced fresh parsley

 

Preheat oven to 275F. Heat 1 tablespoon of the oil in a large skillet over

medium heat. Stir in shiitake, shallot, salt, and pepper. Cook until shiitake

are just tender, stirring frequently, about 4 minutes. Transfer to a plate

using a slotted spoon. Heat 1 tablespoon of the oil in the skillet over

medium-high heat. Add white mushrooms, salt, and pepper. Cook until light

brown, stirring frequently, about 3 minutes. Return shiitake to the skillet and

reheat until sizzling. Add Madeira, reduce heat to medium, and stir until all

liquid is absorbed, about 3 minutes. Adjust seasonings. Remove mushroom mixture

from heat.

 

Heat remaining 2 tablespooons oil in another large skillet over high heat.

Sprinkle seitan with salt and pepper, and in batches cook seiitan 1 minute on

each side. Transfer slices to an ovenproof platter and keep warm in the oven

while cooking remaining seitan. Reheat mushrooom mixture, add parsley, and

spoon over seitan.
