Rice With Springtime Vegetables

Amount Measure Ingredient -- Preparation Method

1 teaspoon cold-pressed olive oil

3 small onions -- chopped

1/2 cup fresh green beans or snow peas -- cut into 1-inch pieces

3 ears fresh corn -- kernels cut from the cob

1 1/2 cups cooked long-grain brown rice

2 tablespoons braggs aminos sauce or mild soy sauce

tamari cashews (see recipe)

 

Heat the oil in a large skillet or wok. Add the onions and cook, covered, until

they are tender. Add the beans or snow peas and cook, covered, for 2 minutes.

Add the corn and cook, covered, for 5 minutes. Add the cooked rice and Braggs

Aminos and mix well. Garnish with Tamari Cashews.

1/2 cup cold-pressed vegetable oil

4 ounces cashews

1 tablespoon natural tamari soy sauce

 

Heat the oil in a small skillet. Add cashews and tamari soy and cook, stirring

until the cashews are completely coated with tarmari.
