Guest guest Posted April 16, 2001 Report Share Posted April 16, 2001 * Exported from MasterCook * Broiled Lemon-Garlic Mushrooms Recipe By : Pasta East to West by Nava Atlas, page 183 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon extra-virgin olive oil 1 tablespoon fresh lemon juice 1/2 teaspoon light brown sugar or Sucanat 2 garlic cloves -- minced 12 ounces fresh mushrooms -- see note, up to 16 Minced fresh parsley -- for garnish 4 to 6 servings Note: Use any variety of mushrooms: (white, portobello, shiitake, crimini, baby bella, or a combination) This preparation is similar to Broiled Mushrooms Teriyaki, but the lemon and garlic flavors make it compatible with Italian or fusion pasta dishes. Combine the olive oil, lemon juice, brown sugar, and garlic in a medium mixing bowl, and stir together. Wipe the mushrooms clean. If using shiitakes, remove and discard the stems. Leave the mushrooms whole (though if you're using large portobellos, slice them 1/4 inch thick). Combine the mushrooms with the lemon-garlic mixture, and stir together. Arrange the mushrooms in a shallow, foil-lined pan, and pour any excess marinade over then. Broil under a preheated oven broiler or a toaster oven broiler for 4 minutes, then stir. Broil again until the mushrooms begin turning dark and are touched with charred spots, about 4 to 5 minutes. Remove from the broiler and transfer to a covered serving container until needed. Garnish with the parsley before serving.
