Mandarin Orange Vinaigrette (Desperation Dinners)

Amount Measure Ingredient -- Preparation Method

1 8-oz can Mandarin oranges

1/4 cup red wine vinegar

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon honey

2/3 cup vegetable oil

 

Drain the oranges and put them into a blender or food processor.

Add the vinegar, salt, pepper and honey. Turn on the motor, and add the oil

slowly in a thin stream until all the oil is thoroughly blended. Serve at once,

or cover and refrigerate until ready to serve. Shake well before serving.

Refrigerate leftover dressing, covered, for up to two weeks.

Raspberry Vinaigrette (Desperation Dinners)

Amount Measure Ingredient -- Preparation Method

3 tablespoons seedless all-fruit raspberry jam

1/3 cup red wine vinegar

1/4 teaspoon salt

1/4 teaspoon black pepper

1 cup vegetable oil

 

Put the jam into a 2-cup glass measure and microwave, uncovered, at high, for 15

seconds, or just until the jam melts. Add the vinegar, salt and pepper, and

whisk until well-combined. Add the oil slowly in a thin stream, whisking

constantly until it is thoroughly blended. Serve at once, or cover and

refrigerate until ready to serve. Refrigerate leftover dressing, covered, for up

to two weeks. Makes about 1 1/2 cups.

TIP: Be sure to choose a seedless jam for this slightly tart, fruity

vinaigrette.
