Add the vinegar, salt, pepper and honey. Turn on the motor, and add the oil slowly in a thin stream until all the oil is thoroughly blended. Serve at once, or cover and refrigerate until ready to serve. Shake well before serving. Refrigerate leftover dressing, covered, for up to two weeks. Add the vinegar, salt and pepper, and whisk until well-combined. Add the oil slowly in a thin stream, whisking constantly until it is thoroughly blended. Serve at once, or cover and refrigerate until ready to serve. Refrigerate leftover dressing, covered, for up to two weeks. Makes about 1 1/2 cups. TIP: Be sure to choose a seedless jam for this slightly tart, fruity vinaigrette.
