Mary Hopkins' Irish Soda Bread

6 cups flour

1/2 cup sugar

1 teaspoon salt

2 teaspoons baking powder

2 teaspoons baking soda

1 1/2 teaspoons cream of tartar

1 1/2 cups raisins -- optional

2 tablespoons caraway seeds -- optional

2 eggs -- lightly beaten

1 1/2 cups buttermilk

1/4 cup butter -- melted (1/2 stick)

 

Serves 16.

 

Flour to sprinkle on top

 

Preheat oven to 350 degrees. In a large bowl, mix flour, sugar, salt,

baking powder, baking soda and cream of tartar. Add raisins and caraway

seeds. Make a well in the middle of the dry ingredients. In a small bowl,

combine the eggs, buttermilk and melted butter and pour all at once into

the well. Stir until all dry ingredients are moistened. The dough will be

stiff. Pat into a heavy, well-greased, oven-proof 10-inch skillet or heavy

baking pan. With a sharp knife, cut a cross into the top of the dough at

least 1/2-inch deep. Sprinkle flour on top. Bake for an hour or more,

until golden brown.
