Sauteed Tempeh with Spicy Tomato Sauce

2 tablespoons olive oil

plus

1/3 cup olive oil

1 pound poached tempeh -- cut inot 1/4-inch thick triangles

1 clove garlic -- halved

1/2 teaspoon salt

2 large tomatoes -- peeled and chopped

or

2 cups canned tomatoes -- chopped

1/4 teaspoon cayenne

1 tablespoon red wine vinegar

 

Heat the 2 tablespoons oil in a large skillet over medium-high heat. Add tempeh

triangles and saute until golden brown, about 2 minutes each side, Keep warm.

In a food processor, combine garlic and salt. Add tomatoes and cayenne, mixing

until smooth. With machine running, stream the remaining 1/3 cup olive oil

slowly through feed tube and process until smooth and thick. Add vinegar and

blend well. Spoon sauce over sauteed tempeh triangles.
