Guest guest Posted April 12, 2001 Report Share Posted April 12, 2001 * Exported from MasterCook * Seitan Pizzaiola Recipe By :Robin Robertson, 366 Healthful Ways to Cook Tofu and other Meat Alternatives Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 pound seitan -- cut into 3 x 1-inch strips 1/2 teaspoon salt 1/8 teaspoon freshly ground black pepper 1/2 pound mushrooms -- sliced 1 medium onion -- thinly sliced 2 cloves garlic -- minced 5 ripe plum tomatoes -- chopped or 1 cup canned Italian tomatoes -- chopped 1/4 cup minced fresh parsley 1/2 teaspoon dried oregano 1 teaspoon hot red pepper flakes 1 cup dry red wine 1/2 cup freshly grated Parmesan cheese Heat olive oil in a large skillet over medium-high heat. Sprinke seitan wiith salt and pepper, add to skillet, and brown quickly on both sides, about 5 minutes. Transfer seitan to a flameproof dish. Add mushrooms to skillet and saute about 3 minutes. Remove with slotted spoon and place over seitan. Add onion and garlic to skillet and saute about 5 mnutes. Add tomatoes, parsley, oregano, red pepper flakes, and wine. Bring to a boil and reduce liquid by one half, about 10 minutes. Top seitan with mushrooms and Parmasan cheese and place under broiler until cheese browns slightly. Spoon sauce onto dinner plates and top with seitan slices and mushrooms. Description: " A meat-alternative version of Steak Pizzaiola that doen't scrimp on flavor.
