Macaroni And Cheese

Amount Measure Ingredient -- Preparation Method

1 pound elbow macaroni

cooked al dente and drained

2 teaspoons butter

2 tablespoons flour

4 cups skim milk -- warmed

1 pinch dry mustard

1 pinch cayenne pepper

Salt and pepper -- to taste

1 cup grated low-fat Cheddar cheese

2 cups grated part-skim mozzarella cheese

1/3 cup grated Parmesan cheese

1 cup fresh bread crumbs

 

Serves 8.

 

Preheat oven to 350 degrees. Lightly oil a 9-by 13-inch baking dish. In

large pot of boiling water, cook pasta to al dente. Drain and set aside.

 

In medium saucepan over medium-low heat, melt butter; add flour. Cook,

whisking constantly, for 2 minutes, without browning. Add milk in slow,

steady stream, whisking to incorporate. Add mustard, cayenne, salt and

pepper. Cook until thickened, about 2 minutes. Remove from heat.

 

In large bowl, toss together macaroni, cheeses and sauce. Spoon into

prepared dish. Top with bread crumbs. Bake 30 minutes, or until bread

crumbs are light brown and sauce is bubbling. Let cool slightly before

serving.
