Real California Panela cheese -- see TIP 1/2 large onion -- chopped 4 cloves garlic -- finely chopped 1 teaspoon dried oregano 1 teaspoon ground cumin 1/8 teaspoon ground clove 1 tablespoon olive oil 1 1/2 quarts cooked assorted beans 1 large carrot -- grated 1 large zucchini -- grated 1 cup vegetable stock or water 1/8 cup cornmeal cayenne pepper to taste 1/2 large red bell pepper 12 lime wedges Crumble cheese (about 2 cups); reserve. Sauté onion and next 4 ingredients in olive oil until onion is soft, about 5 minutes. Stir in beans and next 3 ingredients; simmer 15 minutes. Mix cornmeal with 1/4 cup water and cayenne pepper; stir into chili with bell pepper. Simmer 15 minutes. Remove from heat; stir in reserve cheese. Garnish with 2 lime wedges. TIP - Panela is a mild and moist cheese with a sweet, fresh milk flavor. It has a firm texture similar to fresh Mozzarella and does not melt when heated. Features a distinctive basket weave surface texture. Use in cooked dishes, sandwiches and salads, as well as with fruit.
