Jack Quesadilla with Pears

Amount Measure Ingredient -- Preparation Method

2 red-skinned pears -- halved, cored, finely diced

2 firm ripe figs (optional) -- finely diced

3 tablespoons fresh lime or lemon juice

3 tablespoons toasted pine nuts

2 tablespoons chopped fresh mint

2 tablespoons chopped fresh cilantro

1/4 teaspoon salt

1/4 teaspoon pepper

3 cups shredded California Monterey Jack cheese -- (12 oz.)

8 large fat-free flour tortillas -- (9-10 inch)

 

To make salsa, stir together pears, figs, juice, pine nuts, mint, cilantro, salt

and pepper. Chill before serving. To assemble quesadillas, place 1/3 cup grated

cheese on one half of each tortilla; fold other half over to cover cheese,

making a half-moon shape. In hot skillet or griddle (with nonstick surface),

over moderate heat, brown quesadillas 1 to 1 1/2 minutes on each side, until

cheese melts. Remove from pan, cut each in 3 to 4 wedges; serve with salsa.
