Guest guest Posted April 11, 2001 Report Share Posted April 11, 2001 * Exported from MasterCook * Lemon-Ginger Tofu Recipe By :Robin Robertson, 366 Healthful Ways to Cook Tofu and other Meat Alternatives Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound frozen firm tofu -- thawed 2 tablespoons low-sodium tamari 1 teaspoon toasted sesame oil 2 tablespoons fresh lemon juice 1 teaspoon corn oil 1 medium onion -- thinly sliced 2 cloves garlic -- minced 1 tablespoon grated fresh ginger 1/2 cup vegetable stock 2 teaspoons cornstarch dissolved in 2 teaspoons cold water freshly cooked rice or other grain 1 tablespoon toasted sesame seeds Squeeze thawed tofu gently to remove water. Cut into 1/2-inch thick slices. In a bowl, whisk together tamari, sesame oil, and lemon juice. Add tofu and marinate for 10 minutes, turning tofu once. Heat corn oil in a large skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Add the garlic and ginger and saute 1 minute. Remove tofu from marinade and reserve marinade. Add tofu to the skillet and saute 1 minute. Add marinade and the stock and simmer 5 minutes. Add cornstarch mixture and stir constantly until liquid thickens. Serve immediately over cooked rice or other grain.
