Sauteed Seitan with Basil Sauce

2 tablespoons corn oil

1 pound seitan -- cut into 1/4-inch slices

1 cup chopped onion

1/2 cup chopped carrot

1/2 cup chopped celery

2 cups vegetable stock

1 cup dry white wine

1 tablespoon minced fresh parsley

1 clove garlic -- minced

1 bay leaf

1/4 teaspoon minced fresh thyme

or

1/8 teaspoon dried thyme -- crymbled

1/4 teaspoon freshly ground black pepper

1 cup heavy cream

1/2 cup tightly packed fresh basil leaves

salt

basil leaves for garnish

 

Heat oil in a large skillet over medium-hgh heat. Add seitan and brown on both

sides, about 5 minutes. Transfer to ovenproof platter and keep warm in a 275F

oven. Reheat skillet over medium-low heat. Add onion, carrot, and celery.

Cover and cook until very tender, stirring occasionally, about 20 minutes. Add

stock, wine, parsley, garlic, bay leaf, thyme, and pepper and bring to a simmer

for 5 minutes. Strain liquid, pour into a saucepan, and boil until reduced by

half. Add cream and boil until reduced by half. Add basil and puree sauce in a

food processor. Add salt to taste. Serve sauce over seitan slices, garnished

with whole basil leaves.
