Guest guest Posted April 10, 2001 Report Share Posted April 10, 2001 * Exported from MasterCook * Almost-Spring Fruit Bowl Recipe By : Vegetarian Celebrations, by Nava Atlas, page 46 Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 bosc pears -- quartered cored and diced 2 small oranges sectioned and seeded 1 cup green or red seedless grapes 1/2 cup chopped dried apricots 1 pound canned unsweetened pineapple -- drained chunks 1/4 cup maple syrup 1/2 teaspoon grated fresh ginger 2 teaspoons lemon juice 6 to 8 servings It's not quite time for the fruits of spring, but this salad makes the most of this in-between season for a luscious and refreshing finale to the meal. Combine the first 5 ingredients in a serving container In a small bowl, stir together the maple syrup, ginger, and lemon juice. Toss with the fruits. Cover and refrigerate until needed. Serve on dessert plates alongside squares of Rice Pudding (see separate recipe).
