Guest guest Posted April 10, 2001 Report Share Posted April 10, 2001 * Exported from MasterCook * Zucchini, Tomato, And Red Onion Salad Recipe By : Vegetarian Celebrations, by Nava Atlas, page 43 Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium-small zucchinis -- thinly sliced (about 3/4 pound total) 1 pound ripe plum tomatoes -- sliced crosswise 2/3 cup thinly sliced red onion 1/4 cup chopped fresh parsley 1 tablespoon olive oil 1/2 lemon -- Juice of OR more to taste 1 dash ground cumin salt and freshly ground pepper -- to taste curly red- or green-leaf lettuce 1/4 cup sliced black olives 6 to 8 servings Combine all the ingredients except the last 2 in a mixing bowl. Toss well and cove. Refrigerate for an hour or 2, but not more, before serving. Arrange curly-edged lettuce on a large serving platter (an oval-shaped plate works nicely). Arrange the salad over the lettuce, then sprinkle with the olives.
