Guest guest Posted April 10, 2001 Report Share Posted April 10, 2001 * Exported from MasterCook * Tofu Cutlets with Tapenade Sauce Recipe By :Robin Robertson, 366 Healthful Ways to Cook Tofu and other Meat Alternatives Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons capers 6 oil-cured olives -- pitted 3 oil-packed sun-dried tomatoes -- cut into pieces 1/4 cup firmly packed fresh parsley leaves 2 tablespoons fresh lemon juice 1/4 cup olive oil plus 2 tablespoons olive oil 1 pound firm tofu -- cut into 8 1/2-inch slices In a food processor blend capers, olives, tomatoes, parsley, and lemonn juice until mixture is chopped fine. With the motor running add the 1/4 cup olive oil in a stream and blend tapenade sauce until emulsified. In the meantime, heat remaining 2 tablespoons olive oil in a large skillet and cook the tofu until golden brown, about 2 minutes for each side. Serve tofu topped with tapenade sauce.
