Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3/4 cup soy sauce

3/4 cup water

1/4 cup sugar

6 thin coins of fresh ginger

1 tablespoon dark sesame oil

2 teaspoons cornstarch

1/4 cup cold water

This simple sauce is both sweet and salty. It's handy to have around, and it

holds well, so make enough to fill a jar and store it in your pantry or

refrigerator.

Combine everything but the cornstarch and cold water in a small saucepan; simmer

over medium heat for 10 minutes. Dissolve the cornstach in the cold water and

whisk the mixture into the sauce. Bring the sauce to a quick boil for 1 minute

and continue to whisk. The cornstarch will bind the sauce ever so slightly and

give it a silky texture. Remove from the heat and cool, allowing the ginger to

steep in the sauce uuntil you're ready to store it. Strain out the ginger and

store the sauce in a sealed jar in the refrigerator. It will keep for several

weeks.

Yield:

" 1 1/2 cups "
